I was just dying to have some bread and I could not bother making anything from scratch. All I had with me was some cauliflower and inspired by the numerous cauli rice recipes on my social media timeline I decided why not take the plunge to making something beyond cauli rice.

Recipe

Servings 1- 2

Time: 45 minutes

Ingredients

I cauliflower head, cut in pieces without stem and shredded in a mixie
1 egg
1/2 cup cheese/paneer/ricotta/tofu
Salt to taste
Pepper to taste

Filling for sandwich

Tomato – 1 sliced
Tofu – 2 slices
Basil – 1 bunch
Walnuts – 5-7

The filling can be anything that you have lying around.

For egg replacer, use a commercial egg replacer or some flax seed gel ( 1 tbsp flaxseed powder in 3 tbsp of warm water)

Method

First chop the cauliflower head into pieces and then give it a pulse in food processer/mixie. Then put into the microwave for over 4-5 minutes, in intervals of 30 seconds. Please do this as it is the easiest way to make sure no moisture is there in the shredded cauli.

Then add the egg and almost half cup of unprocessed cheese . When I say unprocessed it is a single origin cheese (https://www.beyondceliac.org/gluten-free-diet/is-it-gluten-free/cheese/) .

For those of you who have doubts please check the link and if not cheese some paneer or scrambled silken tofu will do as well. To the cauli mix add salt and pepper. It now becomes a dough, you can shape it into bread slices and place it onto the parchment paper. While you are doing this make sure you preheat your oven to 180 Degree Celsius and if you do not have an OTG check if you have a microwave with a convection setting.

Once the oven is preheated, place the caulibread slices in the oven for 15-20 mins or a little more if you feel it isn’t come together.

Take the baked bread slices and toast it if you want to. What I did is cut some fresh tomato slices, got some tofu and dipped in ground basil and walnut mix and toasted in olive oil on a pan. I must tell you it made a great sandwich which filling as well. Best part though is all my bread cravings went away;)

    Interesting receipe..seems simple too..I m a vegetarian.
    Can I use flax egg instead of a egg please

      You could try using it, I have not tried it but it should work.
