Gluten free chocolate cake

You cannot deny that chocolate cake is a universal dessert. When I used to do pop up stalls in Bangalore a few years ago, the chocolate cake would sell out first.

As for me, I will nibble at chocolate cake and that’s that. More than the cake it is the batter that I love😋😁

I grew up eating my mother’s chocolate cake. My sisters and I would wait for Amma to finish pouring the batter into the cake tin and we would then wipe clean the mixing bowl. Finger lickin’ good is what it was to us. My aunts are good bakers too , so are my mother’s friends…so there was never any dearth of good cake growing up . When I got married, I realized my mother in law is a good baker too. She still follows her mother’s recipes. Baking definitely is a skill most Syrian Christian women possess. It has to do with the fact that Kerala was an erstwhile hub of international trade, spice route. The Portuguese, Dutch, British , Arabs all traded with the erstwhile Travancore Kingdon , now known as Kerala. It is but natural that our food is a melange of all those influences.

However, after my Celiac diagnosis in 2010 ( yea, 10 years now) I could never eat any of their cakes. Honestly, that is the reason I took to baking and lo! & behold I can put together baking recipes in a jiffy now. I was thinking to myself should I share this recipe?! Or should I just keep it to myself . In the spirit of Diwali, I chose to share this. This is my gift to the Celiacs & gluten free community 🙂 💛🙂

I hope you like this as much as my family did. I had to literally take it away from my husband so I could atleast take a decent picture.

Recipe

Servings – 10 – 12 large slices

You will need –

  • 20 cm round cake tin
  • A spatula or whisk
  • A deep bottom bowl
  • Cooling rack or tray
  • Baking or parchment paper ( optional)

Ingredients

  1. Gluten free flour – 120 gm
  2. Instant Coffee powder – 1 tbsp
  3. Unsweetened cocoa powder – 1/4 cup
  4. Salt – a pinch
  5. Condensed milk – 1 tin or 400 gm
  6. Oil – 1/4 cup
  7. White Vinegar- 1/4 tsp
  8. Baking powder – 1/4 tsp
  9. Baking soda  – 1/4 tsp
  10. Xanthan gum – 1/4 tsp **
  11. Egg – 1

For the Glaze

  • 150 gm dark chocolate or milk chocolate
  • Few tbsp of milk – dairy or non dairy

Method

  • Grease the cake tin with butter or oil or line with baking paper .
  • Preheat oven to 180 ° Celsius .
  • Take the deep bottom bowl 🥣 , add to it the flour mix, then add cocoa powder, coffee powder, baking soda & baking powder, xanthan gum and salt.
  • Mix this dry mixture together thoroughly .
  • To this dry mixture add an egg, mix well then add the condensed milk, oil and vinegar.
  • Mix till the dry & wet mixture are combined.
  • I just used a spatula to mix, you can also mix this with the help of a stand mixie or electric whisk.
  • The batter should be thick , not runny.
  • Scoop the batter into the cake tin.
  • Bake the cake for about 40 minutes or until a toothpick when inserted in the center comes out clean.
  • Place cake to cool on a rack.
  • In the meantime melt the chocolate in a double boiler and if is too thick add few drops of milk.
  • Pour the hit glaze over the cake.
  • Slice & serve the cake only when it is completely cool.

Notes :

* You may use any gluten free flour mix. I used an equal mix of sorghum , brown rice and tapioca starch. If using a commercial mix which has xanthan gum, then you don’t need to add it again. Skip adding extra xanthan gum.

** Substitutes for xanthan gum – equal quantity of guar gum, powdered flax seed/chia seed or psyllium husk.

If you don’t want to use egg, please use yoghurt, aquafaba( water from cooking chickpeas) – 1/4 cup , 1 tbsp powdered flax seed /chia seed in 3 tbsp hot water.

Nestle milkmaid and Amul Mithai Mate are glutenfree. Two condensed milk brands available in India that are safe to use. If you are vegan or don’t want to use dairy , you may use almond condensed milk , JusAmazin’ ( Indian brand based out of Bangalore ) is glutenfree.

I used Hershey’s cocoa powder, again safe & glutenfree.

You may use any frosting of your choice or just eat it plain.
